Snacks on the go for Vancouver Kids

Ingredients:

1 1/2 cups dried fruit of your choice (such as apples, apricots, cranberries)
1 cup Brown Rice Krispies cereal
1 cup unsweetened shredded coconut
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/3 cup sesame seeds
1/2 cup rolled oats
½ cup unsweetened applesauce
1/2 cup peanut butter, warmed slightly

Method:
1. Mix the dried fruit and cereal in a food processor until they are finely ground, then transfer to a bowl.
2. Next, add seeds, coconut, and oats to the food processor and pulse until they become smaller pieces and well mixed. Add to the fruit mixture, followed by peanut butter and applesauce. Mix well and let sit in the fridge for about an hour. Be sure to cover the bowl with a lid or saran wrap.
3. Split the dough into balls and roll each ball in sesame seeds. You should be able to make around 15 balls.
4. Serve immediately, or you can wrap the balls individually in saran wrap for later.

These snacks will store for several days in the fridge. Great for on the run snack. This is a great interactive recipe that is fun for the whole family to get involved.
